Last night, I had a grown-up slumber party with a very dear friend.
There were of course many differences in a slumber party as an adult versus as a kid. As a grown-up we made a big homemade Indian meal for dinner and drank lots of wine instead of binging on pizza and pop. We talked about investing in real estate and how to plan a wedding instead of obsessing over our boy crushes and how we will freak with them at the next school dance.
But there is ONE element of the slumber party that is timeless. No matter what age you are, if you have a slumber party, you guaranteed will end up talking for hours as you lie in bed, way past your bedtime.
And even though as adults we love our own beds (and especially being in bed with our significant others) and therefore usually pass on any invite for a slumber party, it is this timeless tradition of talking for hours in bed with best friends that I do not think should be lost just because we get older.
In fact ESPECIALLY as adults I think we need a time to chat where we are not checking our cell phones or distracted by the annoyances of grown-up responsibilities. And now that there is substantial evidence provided by the Journal of Socio-Economics that states “an increase in the level of social involvements [ie. hanging with friends!] is worth up to an extra £85,000 a year in terms of life satisfaction. Actual changes in income, on the other hand, buy very little happiness,” than we are in some SERIOUS need of more sleepovers (because they are basically worth $100,000).
So this weekend grab your toothbrush, pack your sleepover bag, and head to a friend’s house. Stay up late talking about anything and everything, and as a special little something, I also suggest making these ICE CREAM SANDWICHES. I was inspired by the wonderful blog Everybody Loves Sandwiches (because seriously, I do love sandwiches and this blog), and it was the perfect addition to a grown-up slumber party:
Tacofino’s Chocolate Diablo cookies ice cream sandwiches
{Originally appeared in Chatelaine}
- 1 1/2 cups all-purpose flour
- 1 cup cocoa powder, preferably Fry’s
- 1 tsp baking soda
- 1/2 to 1 tsp cayenne pepper
- 1 tsp cinnamon
- 1 cup chocolate chips or chunks
- 2 eggs
- 1 cup brown sugar
- 1 cup granulated sugar
- 1/2 cup canola oil
- 3 tbsp ginger juice or grated fresh ginger
- 1 tbsp vanilla
- 1 tsp kosher salt or granulated sugar
{plus for ice cream sandwiches} - 1 pint of vanilla ice cream
- leftover caramel sauce (We seriously just HAPPENED to have leftover caramel sauce from a birthday cake and it made a beautiful addition to the ice cream sandwich!)
Instructions:
Preheat oven to 375F.
In a medium sized bowl, whisk together the flour, cocoa, baking soda, cinnamon, cayenne and salt together until blended.
In a large bowl, mix together the 2 sugars, the oil, eggs, vanilla, and ginger. Slowly stir in the flour mixture along with the chocolate chips until you’ve got a thick, heavy dough.
Bake for 11-15 minutes, or until the tops crackle but are still fudgey in the middle.
ps. If you don’t have time to buy these cookies, just head to Tacofino to buy them!
